The Arbequina and Dahbia olives for this wonderful Moroccan olive oil are crushed 20 minutes after harvest, giving it a beautifully fresh flavor and one of the lowest acidity levels available (0.2° maximum ). The fruitiness of ripe olive is clearly identifiable in nose and mouth with a great diversity of secondary aromas, above all apples and banana, with a hint of ripe fruit like almonds tomato, fennel and artichoke.
