Best summer salad in just four easy steps! I love this version of one of my favorites, serve this south-of-the-border salad with fresh chips, guacamole and tacos and have the perfect dinner party ready in minutes…
Good feta (I like Greek or Bulgarian)
Seasoned rice wine vinegar
Salt and pepper
1. Cut watermelon into bite size cubes.
2. Slice jalapeno paper thin. Sprinkle jalapeno and feta ontop of watermelon along with leaves of mint and cilantro.
3. For dressing mix equal parts lime juice and vinegar, and add agave, salt and pepper to taste. The dressing should be sweet and sour with a bite.
4. Pour dressing over top of salad and serve!
