London Broil Spiced Up

Our Spice Blends make creating a great meal a snap. The blends we offer are made from the highest quality ingredients, are beautifully balanced to produce a perfect palette of flavors redolent of cuisines all over the world, and are ready when you are. And they are beautifully packaged to dress up your pantry!

Here is a simple and terrific recipe to make London Broil either indoors or on the grill, contributed by our friend, and frequent dinner companion, Ross Wasserman.

Preparation

First make a marinade that includes enough good olive oil (we recommend Biolea Organic Extra Virgin Olive Oil, a rich olive oil from Crete) and something acid (either lemon or wine) to marinate the steak, and one of our Spice Blends. We have made this with our Blue Grass Spice Blend, for its down-home spicy heat and flavors, and our Pierre Poivre for a bit of well-balanced peppery kick. We also love Amber Spice Blend, a smoky and sweet blend of mild chilies, brown sugar and mace. My sister-in-law, and inventive cook, used our Appolonia Spice Blend, rich with cocoa powder and orange blossoms, for her London Broil, and tells us it was sensational. A heaping tablespoon of one of our blends is good for a London Broil to feed four, and all work wonders. Let your imagination roam the globe, try our other Spice Blends to enhance your meals.

Stab the meat a few times on both sides to help the marinade penetrate. Marinate the steak for at least half an hour, but up to two hours, turning from time to time.

Remove from the marinade. Sprinkle with Smoked Salt and a little more of the spice blend of your choice.

On the Grill: Grill over high heat for about 5 minutes per side to brown nicely. Then remove to a cooler part of the grill and let it continue cooking for another 10-15 minutes, turning once.

Indoors: Place the meat in hot pan on over medium heat. We use a cast iron pan. Brown the steak well on both sides, and when it is well browned, place the pan in the a 350 degree oven for another 10-15 minutes, until the London Broil is done to your preference.

Both: Remove the London Broil from the heat and let it rest for 5-10 minutes. Slice on the bias and serve.

While the meat is resting, place the pan over medium heat, add the remaining marinade to the pan, stir in a chopped medium onion, and cook down, scraping in any browned bits from the pan. Lower the flame and continue cooking until the sauce reaches your preferred consistency. Pour the sauce over the sliced London Broil and serve immediately. Enjoy!
