Rainbow Summer Salad
I have been spending a lot of time in the country the last few weeks, and there is nothing better than a neighborhood farm stand–they have the most incredible heirloom tomatoes and fresh corn on the cob which inspired this effortless salad. Every time I serve this to friends they go crazy and sing my praises. The truth of the matter is, the tomatoes are the star of the show! As usual this amazing salad can be made in a matter of minutes and never disappoints.
Ingredients

- Farm fresh heirloom tomatoes in a variety of colors
- One ear of fresh corn
- Fresh sprig of tarragon
- Sea salt
- Olive oil
- Red wine vinegar
Preparation
Cut raw corn off of the cob. Cut tomatoes into large wedges and arrange according to color. Sprinkle corn on top of tomatoes followed by a few leaves of tarragon. Dress with olive oil, vinegar, and salt. There is no way anything could be easier!

Caitlin went on to get her degree in World Arts and Cultures from UCLA, and studied in Florence, Italy, which only fueled her interests. After graduating, she moved to New York to pursue a career in fashion, working for the likes of Abercrombie, Proenza Schouler, Halston, and many more. After many years of working in front of the camera, she never lost sight of her true love for food and style.
Now working behind the scenes, she works as a chef/stylist, and has also begun to create her own brand of lifestyle entertainment. Most recently she has worked as the chef on Simon Fuller’s (Creator of American Idol) show “If I Can Dream”, as well as the Demi Moore produced show, “The Conversation”.
